We are always looking for delicious, easy, and healthy meals we can add to our normal cycle of meals. Thanks to the wonderful world of Pinterest, these meals have become some of our very favorites from the last year that we still make at least a few times a month!
Bonus, they’re pretty efficient and offer many easy substitutions to use up leftovers if you have them in your fridge.
5. Chicken, Rice & Veggies
I love anything that I can combine together into a single pan and let all the flavors fuse together. We are always trying to find new ways to enjoy chicken, rice & veggies in a quick and easy way. This one pot recipe is such a great one for any family and can be easily scaled or expanded to include your favorite flavors! I like swapping peas for some steamed broccoli alongside the carrots, or quinoa for a little extra oomph.
4. Easy Pasta Salad
I think my favorite part about making a rotini pasta is the versatility for leftovers. A light sauce with a lot of additional toppings can be enjoyed when prepared warm, then enjoyed (sometimes tasting even better) chilled the following day straight from the fridge. Some personal favorites of mine to include with a good rotini are a light pesto and olive oil sauce, olives, cherry tomatoes, shallots, garlic, hard cheeses, and topping cold pasta salad with fresh avocado. Bonus tip: make in bulk then have easy leftovers for days!
3. Creamy Vegan Garlic Pasta with Roasted Tomatoes
Any creamy alfredo-esque pasta is my personal favorite. I love it on a vegetable penne and always with some sea salt and cherry tomatoes. So easy, light, and delicious. We love adding grilled chicken breast, or subbing for delicious fettuccine noodles. Pasta is a staple in our weekly meals but we’ve cut out so many carbs by switching to veggie noodles! Barilla veggie noodles (comes in rotini and spaghetti) are made from zucchini and spinach, and (penne) tomatoes and carrots. For us pasta lovers, we’ve noticed this was one very easy and quick substitution to switch our pastas to a much healthier option, and we don’t notice any flavor difference! The veggie penne does taste very strong of tomato, so I only pair their penne with pesto or cream based sauces.
2. Taco Salad
It’s no secret that I love mexican food. I could honestly eat it every day for every meal without any issues. I love tacos, burritos, nachos, taco salad, chips and dip, 7-layer bean dip, tamales, everything. The spices, the flavors, the layers — it’s just so well rounded and delicious. My personal favorite is taking our leftovers from previous mexican dishes and adding them all into a delicious taco salad. We have a variety of different dressings and combinations of lite options including our favorite salsa, some lime juice & a light drizzle of olive oil. I personally love adding corn, cilantro, cheese (queso fresco is the BEST for these salads), some chicken or ground turkey if we have it, beans (black or pinto) olives, and some crunched up tortilla chips! I also like broiling a soft tortilla shell into a bowl shape and adding that extra element of deliciousness.
1. The Best Honey Mustard Chicken Avocado and Bacon Salad
This is probably my favorite meal right now. We make this about once a week and it’s just as good every time. I don’t deviate from this recipe – It’s honestly perfect in every way. Because we make it so frequently, I usually make the chicken beforehand so it’s already cooked and chilled in the fridge, (same with the bacon) and then just toss everything at once. The only thing we change is we add some of our other mustards into the mix. We have a sweet hot mustard by Beaver that adds a nice element of spice.
